Drying is actually as simple as it sounds. Dried fruit have a standard or usual moisture percentage, but that percentage might be too high for your recipe and product. Are you producing a raisin bun, you would like the moisture percentage of the raisins to be higher than if you would be producing a cereal bar. Increasing moisture percentages we do in the Cleaning proces, but in order to lower it, we'll dry it for you.
We have perfected our process to such a degree that you can specify the percentage and we'll make it happen. Of course we then repackage the product to your specs as well.
